The Art of Low Intervention

At Ridge & Vale, we believe the best cider is a pure expression of the fruit from which it's made. Our aim is to showcase the natural qualities of our apples, making 100% juice ciders without additives or intrusive methods. We rely exclusively on our indigenous wild yeasts, which ferment slowly and impart a uniquely local flavour profile. The art of low intervention cider making is in the timing, working with the seasons to bring out the best qualities of the juice.

Exceptional cider begins with exceptional fruit. Through careful tending in our traditional orchards, our apple trees produce fruit that reflects the distinctive character of Wiltshire soils; heavier and more mineral than the acidic sandstone soils typical of cider-making counties.
